The water temperature and shutoff on the filter housing make this the Ferarri of coffee makers. There is no timer, so you actually have to make the coffee. I like to let the filter fill with hot water with the flow restrictor shut. This allows me to stir the coffee and wet the entire contents, allowing it to absorb the water fully. I then allow the coffee to flow on the first setting (slow). If you don't mind a little labor and you like stick shifts, this is an amazing machine. Update: Still use this machine daily, but there are cones now available (Clever Coffee Dripper) with the flow restrictor that do similar work (cheaper) if you don't need the carafe, don't mind heating your own water, or like to brew one or two cups at a time. This smaller model also lives up to the hype. Whether it's worth the price is up to you.The Moccamaster is solidly constructed and produces consistently great coffee. I spent the first week understanding my own ideal ratio of ground coffee to water, and I think you'll want to experiment with that as well until you find your ideal procedure of grinding fineness and coffee-to-water ratio. The beauty of this coffeemaker is that it keeps churning out the same consistent blend once you have decided. Otherwise it's just a normal coffeemaker like any plain old drip coffeemaker. I make my coffee most mornings with just shy of 3 scoops finely ground coffee beans to 1 liter of water -- that makes 3 American mugs full of perfect coffee. If you want to save some for later, the carafe keeps the coffee warm for quite a while, but you'll want to reheat your mug in the microwave by late afternoon.The coffeemaker uses a No.4 Melitta filter cone, so it's easy to dispose of the grounds. It has a few parts (base unit, drip cone holder and lid, and 1 liter vacuum carafe) that are easy to clean -- a nice departure from most coffeemakers, where the parts are oddly connected and you hesitate to take them apart. It's also worth noting that the heating element turns off after the brewing cycle is complete, even if the brewer is left on, so you won't burn it out. It takes about 5 minutes to brew a full pot. You can also make half a pot with the appropriate drip cone setting. There's really no point in stopping the process to snatch an early mugfull.The only downside I've found is that the metal spout where hot water flows into the filter cone gets hot during use, so be careful touching that area. It's also a good idea to wipe underneath the spout after each use, to prevent mineral build-up if you are in a hard water area. Mineral build-up should be viewable through the clear plastic water reservoir, so that will be your clue to clean the pot with the recommended white vinegar and water mixture (just like other coffee makers, except you get a visual indication that it's needed.)I'm very happy with this coffeemaker....This review is from: Technivorm Moccamaster KBTS Coffee Brewer with Thermo CarafeI was introduced to this coffee maker the same time I was introduced to Peet's Major Dickason's Blend coffee (whole bean)- and i would say that each is definitely best in its class. The Technivorm lacks the frills, like a timer, or warming plate which just burns coffee- others have, but it brews coffee at the perfect temperature, and in that respect you get the highest quality coffee available. No need for a timer- you set it up, and flick the "on" button when you're ready to have your coffee. I used to swear by Krups, and have tried that and other highly rated coffee makers over the years- no comparison. This is worth every penny, and I've been spoiled. No matter what coffee you're drinking, you cannot do better than this brewer....
